Preserving Rajasthan's Royal Culinary Legacy
Master Chef Prem Singh Rathore is a renowned food historian and culinary researcher from Rajsamand, Kelwa, Rajasthan, dedicated to preserving the authentic food traditions of Mewar and Marwar.
Born into the Rathore clan, his childhood was shaped by stories of royal palaces, village traditions, and generations of home cooks who preserved Rajasthan’s culinary heritage through handwritten recipe collections and oral storytelling.
Rather than receiving formal hotel management training, Prem Singh Rathore learned directly from experienced 80 to 90-year-old Rawala cooks, many of whom continued to prepare meals over traditional chulhas using brass degchis, preserving techniques that have remained unchanged for generations.
His culinary journey also includes professional experience with Oberoi Hotels & Resorts, where he explored the rich history of Rajputana cuisine while documenting stories behind royal kitchens and forgotten recipes.
Inspired by handwritten family recipe “bahis” inherited from a Thakur family’s haveli cook and his grandparents, he embarked on a mission to preserve the disappearing culinary traditions of Rajasthan before they were lost forever.
Every recipe featured in this book has been personally researched, tested, and carefully adapted for today’s kitchens while maintaining its original authenticity, flavors, and cultural significance.
Through his work, Prem Singh Rathore continues to preserve one of India’s richest culinary traditions for future generations.
